Pork Roast in Apple Sauce

Ingredients
Apple sauce

1 kg Apples, rose

1 spoon Honey

1 piece Juice, lemon

2.5 dl Alcohol, Wine, White

800 g Meat, pork, shoulder

0.5 dl Oil, vegetable oil, canola

0.5 teaspoons Salt, table

2 pinch Spices, pepper, black

Wash the meat and pat it dry. Tie the meat tightly with string to maintain its shape during roasting. Season it with salt and pepper to taste and place it in a greased ovenproof dish (roasting pan), with the skin side facing up.

Preheat the oven to 190 degrees Celsius. Place the meat in the preheated oven and roast for 20 minutes, turning it frequently. Then reduce the temperature to 170 degrees Celsius and roast the meat for another 50 minutes. Continue to turn the meat and baste it with the juices from the pan as needed.

Meanwhile, prepare the sauce. Cut the lemon in half and juice it. Peel the apples, remove the cores, and slice them thinly. Drizzle them with lemon juice to prevent browning. Place the apple slices in a pot and add honey and wine.

Simmer the apples over moderate heat for about 30 minutes until they become soft. Then mash or blend them, return them to the pot, and keep warm.

Once the meat is roasted, remove the string and slice the meat. Arrange it in a warm serving dish and surround it with the prepared apple sauce. Strain the juices from the roasting pan into a small bowl and serve alongside the roast.
