Pork Roll with Chestnut Filling

500 g Meat, turkey, breasts

20 g Butter, unsalted

1 piece Carrot, fresh

1 piece Onion, raw

1 pod Garlic, fresh

200 g Nuts, chestnut, cooked

20 g Cheese, Parmesan, grated

20 g Nuts, almonds

100 g Meat, pork, smoked bacon

Preheat the oven to 180 degrees Celsius. Using a sharp knife, cut the pork breast to create a larger cutlet, then pound it with a meat mallet to a thickness of one centimeter. If you don't have a larger piece of meat, you can prepare two smaller cutlets. Season the meat with salt and pepper.

Dice the carrot and onion, and mince the garlic. Heat butter in a pan and sauté the vegetables over low heat for 10 minutes, then remove the pan from the heat.

Chop or crumble the peeled chestnuts and add them to the sautéed vegetables along with Parmesan, almond flour, and chopped herbs. Season with salt and pepper, then mix well.

Spread the filling over the meat, then roll it up into a roll. Secure the ends with toothpicks.

Lay slices of bacon side by side on a board, then wrap the roll (or rolls) in the bacon.

Place the meat roll on a baking tray lined with parchment paper. Bake in the preheated oven for 30 minutes, then let it cool slightly before slicing. Serve with your chosen side dish.
