Pork Roll with Spinach, Feta, and Sun-Dried Tomatoes
If you want to surprise your guests or loved ones with a slightly different meal, a meat roll is an excellent choice. Although it may seem difficult and complicated at first glance, it is actually quite simple. If you are not skilled at cutting meat, you can ask your butcher to prepare it for you so that it is suitable for making a roll. Serve it with roasted potatoes or another potato side dish, and you will have a meal that you will savor for a long time.

Rinse the meat under running water and dry it well with paper towels. With a sharp knife, cut it so that you get one large steak, which you then pound with a meat mallet to a thickness of one centimeter. Lightly season the inside of the meat with pepper and salt.

Clean, wash, and dry the spinach. Chop it coarsely. Clean, wash, and chop the spring onion into pieces, and peel and slice the garlic. Cut the bacon into pieces.

Place a pan on the stove and first fry the bacon until crispy. Add butter and garlic, and when it becomes fragrant, add the spinach to the pan. Wait for it to wilt and soften, then mix in the spring onion. Cook the ingredients while stirring for another 2-3 minutes, then remove the pan from the heat and let the contents cool slightly.

Preheat the oven to 200 degrees Celsius. Mix the crumbled feta, thyme, and chopped sun-dried tomatoes into the fried ingredients. Spread the filling in an even layer in the center of the pork. Shape the roll and tie it with kitchen twine to prevent the filling from escaping during baking.

Peel the garlic and crush it into a paste with salt, then mix it with mustard and pepper. Spread this mixture on the outside of the prepared roll, place it in a greased baking dish, and add a little water to the dish. Bake in the preheated oven for 40-50 minutes. Baste the roll several times during baking with the juice or sauce that forms in the dish.

Let the roll rest for a few minutes before serving, then slice it and serve it on plates with roasted potatoes. Also serve the sauce that formed in the baking dish alongside.
