Pork Rolls with Sage and Apricots

100 g Butter, unsalted

Wash the meat, dry it, and pound it on both sides. Wash the sage, shake it off, pluck the leaves, and finely chop some of them. Reserve 16 sage leaves for decoration. Peel the onion, wash it, and finely chop it. Cut the bread slices into small cubes. Cut the apricots into small pieces, reserving 16 for decoration.

Melt the butter in a small pot and set aside. Heat a pan and add a teaspoon of melted butter, quickly sautéing the chopped onion. In a larger bowl, combine the bread cubes, chopped sage, chopped apricots, melted butter, and sautéed onion. Mix everything well and let it sit for 5 minutes.

Evenly distribute the filling onto the meat slices, then roll them up. Wrap each roll with slices of bacon.

Heat a pan well and add a little olive oil. Arrange the rolls in the pan and brown them evenly on all sides. It's best to cook them over moderate heat for 2 minutes on each side, then cover and simmer for another 5-7 minutes at moderate temperature.

Serve the warm rolls on plates and serve immediately. As a side dish, you can offer potatoes or vegetables.
