Pork Roulade with Chard and Mushrooms

Ingredients

450 g Meat, pork, shoulder

150 g Mushrooms, mushrooms, fresh

150 g Swiss chard, fresh

1 teaspoon Salt, table

0.5 teaspoons Spices, pepper, black

2 teaspoons Spices, rosemary, dried

0.5 dl Oil, olive
Steps

Thoroughly wash the meat, dry it, and pound it slightly. Place a larger pot with water on the stove. Preheat the oven to 180 degrees Celsius.

Wipe the chanterelles with a damp cloth, clean them, and slice them lengthwise. Clean and wash the chard, then blanch it in boiling water for 2 minutes. Drain the chard and cut it into strips.

Rub the meat with salt and stuff the center with chard and mushrooms. Sprinkle the filling evenly with a little rosemary, then roll the meat into a roulade and tie it with kitchen twine.

Pour oil into a baking dish and place the roulade on it. Sprinkle the top of the meat with ground pepper and rosemary. Bake the roulade in the preheated oven for 35 minutes. After 20 minutes, turn it over and bake for another 15 minutes. Remove the meat from the oven, let it cool slightly, then slice and serve.
