Pork Roulade with Feta and Spinach

Ingredients

450 g Meat, pork, shoulder

70 g Cheese, feta

1 piece Onion, raw

1 pinch Spices, nutmeg, ground

150 g Spinach, raw

1 piece Bell pepper, red, fresh

1 piece Bell pepper, yellow, fresh

3 spoons Oil, olive

2 dl Soup base, chicken, cube

1 teaspoon Salt, table

2 pinch Spices, pepper, black

Thoroughly wash the meat, dry it, and pound it slightly. Peel the onion, cut it in half, and slice it thinly. Wash the spinach leaves, dry them, and tear them into smaller pieces. Wash the peppers, remove the seeds, and slice them into thin strips.

Place a pan on the stove and heat exactly one tablespoon of oil. Add the onion and sauté it over moderate heat for about 3 minutes until it becomes translucent. Then add the nutmeg and spinach leaves, and cook for an additional 4 minutes until the spinach softens and the moisture evaporates. Season with salt and pepper to taste, then remove the pan from the heat.

Season the outer side of the meat with salt and pepper. Lay it out on a clean work surface and cover the unseasoned side with spinach, then crumble feta cheese on top. Make sure to leave about 2 cm of the top edge free. Distribute the pepper strips over the feta cheese, then grasp the meat at the bottom and carefully roll it into a roulade.

Preheat the oven to 200°C. Place a larger pan on the stove and heat the remaining oil. Quickly sear the roulade on all sides, then transfer it to a baking dish. Pour the broth into the dish and place it in the oven. Bake for about 40 minutes, basting frequently with the liquid from the dish.

Remove the baked roulade from the oven, place it on a large serving plate, and slice it. The liquid can be used for a sauce or discarded. Serve the roulade with your chosen side dish.
