Steps

Preheat the oven to 200 degrees Celsius. Peel the carrots, halve the larger pieces, and leave the smaller ones whole. Peel the garlic and slice it into thicker pieces. In a small bowl, mix the remaining ingredients for the marinade.

Place the carrots and garlic in a baking dish, pour the prepared marinade over them, and mix well. Cover the dish with foil and place it in the oven for 30 minutes.

Meanwhile, in a small bowl, mix cumin, paprika, and salt, and rub the pork tenderloin well with the mixture. Heat olive oil in a pan, add thyme sprigs, and sear the meat on all sides for 5 minutes over the heated fat.

Remove the foil from the baking dish and place the pork tenderloin among the carrots. Bake for another 15 to 18 minutes, depending on the size of the tenderloin. After baking, let the meat rest for 10 minutes before slicing it.
