Pork with Sage and Apple Salad
You dont really need any side dishes for this meal, as the combination of meat and salad is sufficient for a light lunch. However, if youre still looking for something to serve alongside, we recommend cooked quinoa, whose nutty flavor nicely rounds out all the flavors.

Steps

Rinse the pork chops under running water, dry them well with paper towels, and place them in a shallow ceramic bowl. Finely chop about 1/3 of the sage leaves. In a small bowl, mix 2 tablespoons of oil, 3/4 of the lemon juice, the chopped sage, salt, and pepper. Pour the marinade over the pork chops, cover the bowl, and refrigerate for 1 hour.

Wash the apples and cut them into quarters. After removing the stems and cores, slice the quarters into thinner pieces, place them in a larger bowl, and drizzle with the remaining lemon juice. Clean the spinach leaves, wash them, dry them, and add them to the bowl with the apples. Drizzle with the remaining olive oil, season with salt, and mix well.

Heat a large pan over medium heat. Place the marinated pork chops in the hot pan and cook for 3 to 5 minutes on each side. Remove the cooked pork chops from the pan and keep them warm on a plate. Pour the remaining marinade into the hot pan and add the whole sage leaves. Use a spatula to scrape the bottom of the pan well to release all the caramelized bits that formed during cooking. Once the sage leaves become crispy, remove the pan from the heat.

First, serve the prepared salad on the plates. Add the cooked pork chops, top them with the crispy sage leaves, and drizzle with the hot marinade. Serve the prepared dish.
