Potato alla Carbonara
Slice the potatoes and boil them. Enrich them with bacon and smoked pork neck, pour over a mixture of eggs, cream, and cheese, and bake in the oven. A great idea for a simple and extra delicious oven-baked meal!

Steps

Peel and finely chop the onion. Sauté it in a little oil. Add the bacon and fry for another 5 to 10 minutes, stirring occasionally. Remove the pan from the heat and drain the excess fat.

Peel the potatoes, wash them, and cut them into thick slices. Place them in a large pot, cover with enough cold water, and place on the stove. Once the potatoes come to a boil, simmer them for 10 minutes, then remove the pot from the heat and drain the potatoes well.

Preheat the oven to 180°C (350°F). Grease a deep baking dish (20 x 30 cm) with oil. Spread half of the potatoes on the bottom of the dish and cover with a layer of fried bacon and onion. Add another layer of potatoes, then sprinkle with smoked pork neck cut into small pieces.

In a bowl, mix the eggs, sweet and sour cream. Stir in the grated cheese and season with pepper and salt to taste. Pour the mixture over the ingredients in the baking dish. Bake in the preheated oven for 45 to 60 minutes. When the top is golden brown, it is ready. Serve with a bowl of salad, and sprinkle some chopped parsley on top before serving.
