Potato Baked in Foil with Crispy Prosciutto
Baked potatoes are usually served as a side dish. But with a few excellent additions, we can quickly turn them into a standalone meal, which we can enjoy for lunch or dinner with a large bowl of seasonal salad.

Ingredients
-
4 pieces Potatoes, white
-
0.5 teaspoons Salt, table
-
pieces Sour cream
-
1.5 spoons Oil, vegetable oil, canola
-
6 slice Meat, pork, smoked bacon
-
8 twig Thyme, raw
Steps
-
Preheat the oven to 200 degrees Celsius. Wash the potatoes thoroughly under running water (scrub them if necessary) and dry them with a kitchen towel. Then pierce them several times with a fork. Wrap each potato individually in aluminum foil.
-
Arrange the foil-wrapped potatoes on a rack and bake in the preheated oven on the middle rack for about 45 minutes. Check if the potatoes are done with a thin knife; if needed, bake them for an additional 5 to 15 minutes.
-
While the potatoes are baking, prepare the other ingredients. Cut the chives into small pieces. Heat oil in a pan and crisp the prosciutto slices on both sides. Cut two crispy slices into small pieces.
-
Remove the baked potatoes from the oven and carefully unwrap the foil from the top (be careful not to burn yourself). Make lengthwise cuts in the potatoes with a knife and gently squeeze the bottom to open them up. Lightly salt the inside of the potatoes and fill them with sour cream, then sprinkle with the prosciutto pieces and chives. Finally, insert a slice of prosciutto into each cut and serve the prepared dish.

Instead of prosciutto, you can use bacon or pancetta.
