Ingredients
-
4 pieces Potatoes, white
-
pieces Oil, olive
-
50 ml Milk, whole milk
-
2 spoons Butter, unsalted
-
50 g Cheese, edamame
-
1 bouquet Thyme, raw
-
pieces Salt, table
-
100 g Sour cream
-
6 slice Meat, pork, smoked bacon
Steps
-
Preheat the oven to 205 degrees Celsius. Wash the potatoes thoroughly under running water (scrub if necessary) and dry them. Coat the outer side of the tubers with olive oil and salt them. Place them on a baking tray and bake in the preheated oven for 40 minutes.
-
Once the potatoes are baked, cut them lengthwise and let them cool slightly. Then carefully scoop out the flesh, leaving a thin layer next to the skin.
-
To the scooped-out flesh, add milk, butter, cheese, and chopped chives. Save a bit of cheese and chives for later. Season with salt and pepper, mix well, then fill the hollowed-out potato halves with the mixture. Sprinkle with the remaining cheese and bake for another 10 minutes.
-
Meanwhile, in a pan, crisp up slices of bacon and crumble or roughly chop them.
-
When the potato boats are baked, top each with a spoonful of sour cream and sprinkle with bacon and chives.
