Potato Bowls with Beans

Ingredients

1.8 kg Flour, potato

4 spoon Oil, vegetable oil, canola

1 piece Onion, raw

2 pod Garlic, fresh

0.5 teaspoons Spices, turmeric, ground

0.5 teaspoons Spices, cumin, seeds

800 g Beans, baked, can

1 spoon Juice, lemon

150 ml Water

0.5 teaspoons Salt, table

1 pinch Spices, pepper, black

2 spoons Tomato sauce, without salt

0.5 teaspoons Spices, coriander - dried leaves

Preheat the oven to 180°C (350°F). Thoroughly wash the potatoes under running water and scrub them if necessary. Pierce them several times with a fork, then arrange them on a baking tray greased with butter. Place the tray in the oven and bake the potatoes for about 75 minutes.

About 20 minutes before the end of baking, start preparing the filling. Peel and finely chop the onion and garlic. Place a small pot on the stove, heat the oil, and sauté the onion for about 5 minutes, stirring occasionally.

Then add the garlic, turmeric, and cumin, and sauté for another minute. Stir in the beans, lemon juice, tomato paste, water, and coriander. Season with pepper and salt to taste, then cover the pot and let it simmer on low heat for about 10 minutes. Stir occasionally.

Make a crosswise cut in the baked potatoes to open them up. Lightly salt the potato flesh and mash it with a fork. Top each potato with the prepared bean mixture. Place the potato bowls on warmed plates and serve.
