Potato Chips with Rosemary
Potato chips are usually enjoyed while watching a game or a movie on TV, but they are not typically served as a snack at formal gatherings. However, with just a few additions, they can be transformed into an aromatic and exceptionally tasty snack, perfect to serve with a glass of aperitif.

3 pieces Potatoes, white

Steps

Place a wide pot on the stove and pour in olive oil and sunflower oil in equal proportions. The oil layer should be about 4 centimeters high. Do not turn on the stove yet! Line a tray with paper towels.

Wash the potatoes under running water, clean, dry, and peel them. Using a mandoline (vegetable slicer), slice them as thinly as possible (so thin that you can see through them). Arrange the slices in a single layer on a clean kitchen towel and dry them thoroughly with paper towels.

Add the dried slices along with rosemary and garlic to the pot with oil. Turn on the stove and set the heat to medium. Cook the potato slices without stirring for 5 minutes, then stir them well with a cooking spoon to prevent them from sticking to the bottom. Let the slices fry until they turn a nice golden brown (15 to 20 minutes). Remove the fried potato slices with a slotted spoon and drain them on paper towels.

Grind salt, pepper, and rosemary into a fine powder in a mortar and use it to season the potato chips before serving.
