First, prepare the yeast mixture: crumble the yeast into a small bowl and mix it with a tablespoon of sugar, a tablespoon of flour, and four tablespoons of warm milk. Let it sit in a warm place for 10 minutes to allow the yeast to activate.

Peel the still-hot potatoes and grate them finely. Mix them with the remaining flour and make a well in the center. Pour the activated yeast mixture into the well and mix. Add melted butter, the remaining sugar, lukewarm milk, salt, and an egg, then knead into a smooth dough. Let the dough rise in a warm place for one hour.

Prepare the filling in a small bowl: mix ground walnuts, jam, and rum. Roll out the risen dough thinly on a floured work surface and cut it into squares. Place a small spoonful of filling in one corner of each square, then fold the square diagonally into a roll, starting from the corner with the filling. Shape the roll into a crescent and place it on a baking sheet lined with parchment paper. Repeat the process until all crescents are prepared. Cover them with a clean cloth and let them rise in a warm place for 10 minutes.

Meanwhile, preheat the oven to 190 degrees Celsius. Brush the crescents with beaten egg before baking and sprinkle ground poppy seeds on top. Bake them in the preheated oven for 20 minutes. Once baked, let the crescents cool, dust them with powdered sugar, and serve.
