Potato Croquettes with Cheese
An excellent idea for using up leftover boiled potatoes or mashed potatoes. Quickly prepared croquettes filled with cheese can be enjoyed on their own or served as a side dish.

500 g Potatoes, white

40 g Butter, unsalted

1 piece Egg, fresh

pieces Salt, table

250 g Flour, Wheat, bread flour

pieces Cheese, edamame

100 g Sesame seeds, dried

pieces Oil, vegetable oil, canola
Steps

Mash the potatoes or use leftover mashed potatoes and mix them with melted butter, egg, and salt. If you have mashed potatoes, simply mix them with all the listed ingredients. Add salt to taste. Gradually add flour to form a dough that doesn’t stick to your fingers.

Cut the cheese into cubes. Take a piece of dough, press a cube of cheese into it, and shape it into a ball. Repeat the process until you run out of dough, placing the balls on a plate or board.

Carefully lift the potato balls with a spoon, roll them in sesame seeds, and shape them slightly.

Heat oil in a large pot and fry the croquettes until golden brown, turning them halfway through. Fry for about 4 minutes. Place the fried croquettes on a paper towel briefly to drain excess oil, then serve immediately.
