Potato Dauphinoise
Potato Dauphinoise is a renowned dish of French cuisine. It consists of coarsely grated or thinly sliced potatoes that are first baked in a pan greased with butter and rubbed with garlic, then finished in the oven until crispy. During baking, it is topped with cream, or even broth, to become thick and creamy. Originally, it is prepared in a pan to form a shape resembling a low and flat cake. We present you with a slightly simplified version where the potatoes are baked directly in a baking dish.

1 piece Butter, unsalted

1 kg Potatoes, white

300 ml Sweet cream

150 ml Milk, whole milk

3 pods Garlic, fresh

1 teaspoon Salt, table

2 pinch Spices, pepper, black

80 g Cheese, groats

Preheat the oven to 180 degrees Celsius. Peel the potatoes, clean them, wash thoroughly, and slice them thinly (like for chips). Dry the potato slices well with paper towels. Grease a deep baking dish with a piece of butter. Peel the garlic and crush it with a knife.

Place a pot with cream, milk, and crushed garlic on the stove. Add the potato slices, season with pepper and salt, and cook for 3 to 4 minutes. Stir the potato slices gently several times during cooking to prevent them from sticking together or to the bottom of the pot.

Use a slotted spoon to transfer the potato slices from the pot and arrange them in the baking dish. Then pour the mixture of milk and cream over them (remove the crushed garlic). Sprinkle grated cheese on top, then place the baking dish in the preheated oven for 40 to 50 minutes. When the potatoes are nicely golden brown on top, remove the dish from the oven and serve the prepared dish.
