Potato Fritters with Carrots and Feta

2 piece Potatoes, white

600 g Sweet potato

600 g Carrot, fresh

1 piece Onion, raw

6 spoon Wheat flour, white, multi-purpose

5 pieces Egg, fresh

100 g Cheese, feta

pieces Oil, vegetable oil, canola
Steps

Peel, wash, and grate the carrots and potatoes into a bowl. Salt the grated vegetables, mix well, and let them sit for 30 minutes.

In a bowl, whisk the eggs and flour until smooth. Peel and finely chop the onion. Add it along with the drained vegetables to the bowl with the egg mixture. Mix well to create a uniform mixture, then crumble in the feta and add the spices.

Heat oil in a large deep pan. Take a heaping spoonful of the mixture and place it in small mounds onto the hot oil. Flatten the mounds slightly with the back of the spoon to form round and as evenly thick as possible patties. Fry them until golden brown on both sides. Remove the fritters from the pan, drain on paper towels, and keep them warm in an oven preheated to 150 degrees Celsius until serving. Repeat the process until all the mixture is used.

Serve the fritters on a large plate or platter, accompanied by lime wedges and a refreshing yogurt (p) sauce.
