Steps

Wash the potatoes thoroughly and scrub them if necessary. Place them in a large pot and cover with cold water, ensuring the water level is about an inch above the potatoes. Salt the water, place the pot on the stove, and wait for the water to boil. Then reduce the heat and cook the potatoes covered for another 25 to 30 minutes until they soften. Check if the potatoes are cooked by inserting a sharp, narrow knife.

While the potatoes are cooking, prepare the herbed cottage cheese. Rinse the parsley and chives under running water, shake off excess water, and chop them coarsely. In a bowl, mash the cottage cheese with a fork and mix it with cream and the chopped herbs. Season with salt to taste.

Drain the cooked potatoes well and let them cool slightly. Once cooled, make a shallow cut on the top of each potato to open it up and fill it with the herbed cottage cheese mixture. Serve on plates and enjoy.
