Potato Langaš
Langaš is a very popular dish in Prekmurje, and every housewife prepares it according to her own recipe. This time, we offer you a recipe for the most original langaš, made from potato dough. Traditionally, it is served with garlic or garlic water, but it is also delicious in combination with sour cream and chopped onions.

Ingredients
Langaš (Slovenian flatbread)

500 g Wheat flour, white, multi-purpose

42 g Yeast, dry

1 spoon Sugar, white

250 g Potatoes, white

1 spoon Oil, vegetable oil, canola

Steps

Peel the potatoes, wash them, and cut them into cubes, then boil them.

While the potatoes are cooking, prepare the other ingredients. Place the flour in a large bowl and make a well in the center. Pour warm water into the well and crumble in the yeast. Add a little sugar and quickly mix with a fork to dissolve the yeast slightly. Let the yeast rise for 5 minutes.

Drain the cooked potatoes, salt them, and mash them. Add them to the bowl with the flour and yeast along with one tablespoon of oil. Knead the ingredients in the bowl with clean hands until you get a smooth and elastic dough that does not stick to your hands or the bowl. Shape the kneaded dough into a loaf and let it rise for 15 minutes.

Divide the risen dough into eight parts and shape them into small balls. Let the balls rise for 5 minutes, while heating oil in a suitable-sized pot. Stretch the dough balls with your fingers into langaš, making the edges thicker and the center thinner. Fry the langaš on both sides until golden brown in the hot oil.

Drain the fried langaš on paper towels, then serve them on a large plate or platter and serve with chopped garlic (garlic water) or onions. Add a little sour cream if desired.

Advice
Instead of water, you can use milk, and instead of potatoes, you can use yogurt. Langaš is easiest to stretch by shaping it into a ball, flattening it, and then slowly pulling it outward from the center with your fingers. To prepare the garlic dressing, chop 4 to 5 cloves of garlic, place them in a pot, and pour over 1 dl of cold water. Add salt and cover. It is best to prepare the garlic dressing one day in advance.
