Potato Patties with Cracklings
Potato patties with cracklings will delight all lovers of simple homemade dishes. They are excellent as a side dish to sauerkraut, but you can also enjoy them as a standalone meal. For example, for dinner with sour cream and a large bowl of salad.

1 kg Potatoes, white

150 g Meat, pork, smoked bacon

2 piece Egg, fresh

2 spoons Wheat flour, white, multi-purpose

1 pod Garlic, fresh

Wash the potatoes thoroughly under running water and scrub them if necessary. Place them in a large pot and cover with cold water, ensuring the water level is about two fingers above the potatoes. Salt the water, place the pot on the stove, and wait for it to boil. Then reduce the heat and cook the potatoes covered for 25 to 30 minutes until they soften. Check if they are cooked by inserting a sharp knife; if it slides in smoothly, drain the potatoes and let them cool.

Finely chop the cracklings. Peel the cooled potatoes and grate them. Mix in the flour, beaten eggs, chopped cracklings, salt, and pressed garlic. If the mixture is too wet or sticky, add some breadcrumbs.

Shape the potato mixture into small patties, about 1 centimeter thick. Sprinkle the tops with ground poppy seeds or cumin. If the mixture sticks to your hands, moisten them with cold water.

Fry the patties in a pan with melted fat (heated oil). Cook them slowly, and when they turn golden brown on the bottom, flip them with a spatula and cook the other side. Serve as a standalone dish or as a side to sauerkraut.
