Potato Patties with Spring Onions
A very simple dish to prepare, made from leftover mashed potatoes. These patties can be enjoyed as a snack, lunch, or dinner, and they also make an excellent side dish for meat and fish dishes.

Ingredients

6 pieces Onion, young

2 piece Egg, fresh

1.5 cups Potatoes, white

1 handful Breadcrumbs, dried

0.25 teaspoons Spices, nutmeg, ground

1 spoon Oil, olive

2 spoons Oil, vegetable oil, canola
Steps

Clean and wash the spring onions. Leave about 2 cm of the green part on the stem, and discard the rest. Boil the spring onions in water for 5 minutes, then drain them well and chop them finely.

In a bowl, add the mashed potatoes, eggs, breadcrumbs, salt, pepper, nutmeg, and the chopped spring onions. Mix the ingredients well with a spoon or spatula.

Heat oil in a large pan. Shape the potato mixture into small patties (about 2 heaped tablespoons of mixture per patty) and place them in the hot oil. When they are golden brown on the bottom, carefully flip them with a spatula and cook the other side. Remove the cooked patties from the pan and keep them warm on a plate. Repeat the process until all the mixture is used.

Serve the cooked patties as a snack with sour cream or as a side dish for meat or fish dishes.
