Potato Rolls with Cabbage

Ingredients

350 g Potatoes, white

60 g Semolina

30 g Butter, unsalted

Prepare the sauerkraut from the listed ingredients. Wash the potatoes thoroughly and place them in a large pot. Cover them with enough cold water to fully submerge them. Lightly salt the water, place the pot on the stove, and cook the potatoes over moderate heat for about 25 minutes. Drain the cooked potatoes and let them cool slightly.

Peel the potatoes, place them in a large bowl, and mash them. Wait for them to cool, then mix in the egg, flour, breadcrumbs, cumin, salt, and pepper. Mix well. The mixture should be thick enough to shape. If the mixture is not thick enough, add a bit more flour.

With wet hands, divide the dough into 12 parts, first shaping them into balls, then into rolls. Place the formed rolls on a large plate (in a single layer!) and refrigerate them for 30 minutes.

Place a large pot of salted water on the stove. When it boils, add the prepared rolls to the boiling water. Reduce the heat to medium-low. Cook the rolls for 15 minutes (until they float to the surface). Remove the cooked rolls from the pot with a slotted spoon.

Heat a pan and melt the butter in it. Quickly brown the cooked rolls in the butter until golden.

Arrange the cooked cabbage and roasted rolls on plates and serve as a standalone dish or as a side to meat.
