Potato Salad with Onion

800 g Potatoes, white

2 piece Onion, raw

8 twig Thyme, raw

4 spoon Oil, vegetable oil, canola

6 spoon Vinegar, apple

0.5 teaspoons Salt, table

1 pinch Spices, pepper, black

Thoroughly wash the potatoes and scrub them if necessary. Place a large pot on the stove, add the potatoes, and cover them with enough salted water to fully submerge them. Boil them in their skins for 25 to 30 minutes until tender. Check if the potatoes are cooked by piercing them with a sharp knife. Drain the cooked potatoes and let them cool.

Once cooled, peel the potatoes and slice them into thin pieces. Transfer the slices to a large salad bowl. Peel the onions. Slice one onion into thin rings and finely chop the other onion. Wash and dry the chives. Save a few sprigs for garnish if desired. Chop the remaining chives. Add the onions and chives to the bowl and mix them with the potatoes.

In a small bowl, mix the oil, vinegar, and salt. Stir until the salt is completely dissolved. Season the salad with the prepared dressing. Add pepper to taste and mix the salad thoroughly once more.

Garnish the prepared salad with the reserved chive sprigs and serve it as a side dish with meat or fish dishes.

Advice
