Potato Salad with Smelt

Ingredients

4 pieces Fish, salt, in brine

1 kg Potatoes, white

2 teaspoons Vinegar, red wine

2 pinch Salt, table

1 pinch Spices, pepper, white

1 piece Onion, raw

3 spoons Oil, olive

1 teaspoon Sugar, white
Steps

Thoroughly wash the potatoes and scrub them if necessary. Place a larger pot on the stove, add the potatoes, and cover them with enough salted water to fully submerge them. Cook for about 25 minutes until they soften.

Then drain them and, once slightly cooled, peel and slice them into rounds. Take the smelt out of the water, drain them well, and cut them into pieces. Carefully remove any bones. Peel the onion and slice it into rings.

Combine the potatoes, smelt, and onion in a large salad bowl. In a smaller bowl, mix salt, oil, vinegar, pepper, and sugar. Pour the prepared mixture over the ingredients in the bowl and mix well. Serve the salad in smaller salad bowls as desired.

Advice
The salad will be even tastier if we add some chopped parsley stems and about 80 g of diced and golden-fried bacon. In this case, its good to fry the onion and bacon together in the same pan.
