Potato Soup with Sausage
Potato soup is a simple rustic dish that still frequently finds its way onto our plates today, as it is quick and easy to prepare. The Rural Womens Association of Ilirska Bistrica shared their recipe for potato soup with liver sausage, a specialty of their region. This hearty spoon dish is an excellent standalone meal that will warm us up on cold days.

Ingredients

1 spoon Lard

1 pod Garlic, fresh

1 piece Onion, raw

1 piece Sausage, liver

1 kg Potatoes, white

Sauté finely chopped onion in lard. Add minced garlic, sausage sliced into rings, and peeled and diced potatoes. Fry everything together for a while (until the potatoes are half-softened), then pour water over the ingredients. Add all the spices and season with salt. Simmer the soup over moderate heat for 40 minutes.

At the end, add tomato paste and, if needed, a roux (flour fried in melted fat) to thicken the soup. Serve the prepared soup in deep bowls with homemade bread.
