Potatoes with Brussels Sprouts and Bacon
Even if youre not a big fan of Brussels sprouts, youll surely enjoy them in combination with bacon, potatoes, and Parmesan. This dish can be served as a side to meat or enjoyed as a standalone meal with a large bowl of seasonal salad.

Ingredients

3 spoons Oil, vegetable oil, canola

160 g Meat, pork, smoked bacon

1 piece Onion, raw

700 g Potatoes, white

500 g Okra, sprouts, fresh

2 pod Garlic, fresh

1 teaspoon Salt, table

0.25 teaspoons Spices, pepper, black

30 g Cheese, Parmesan, grated

Thoroughly clean the unpeeled potatoes, wash them, and place them in a large pot. Add enough cold water to completely cover the potatoes. Boil the potatoes in their skins for 25 to 30 minutes until tender. Check if the potatoes are cooked using a sharp, narrow, and thin knife. Drain the cooked potatoes and let them cool slightly.

While the potatoes are cooking, prepare the other ingredients. Clean and wash the Brussels sprouts. Cut larger sprouts into quarters, and leave smaller ones whole or halve them. Peel and finely chop the onion and garlic separately. Cut the bacon into slices.

Heat oil in a large pan. Sauté the onion and bacon in the hot oil for about 5 minutes, stirring occasionally. Meanwhile, peel the still-warm potatoes and cut them into thick slices. Add them to the pan with the onion and bacon. Cook the ingredients for another 8-10 minutes, stirring occasionally.

Transfer the potatoes, onion, and bacon to a plate. Add the Brussels sprouts and garlic to the pan. Pour in some water and cook the Brussels sprouts over moderate heat for about 10 minutes until tender. Add more water if needed.

Once the Brussels sprouts are tender and the water has reduced, return the potatoes, bacon, and onion to the pan. Season with pepper and salt, and mix well. Cook for another 2 minutes while stirring.

Serve the prepared dish on plates and grate some Parmesan cheese on top.
