Ingredients

6 pieces Lemon, fresh, without shell

3 twigs Peppermint, fresh

2 twigs Rosemary, fresh
Steps

Thoroughly wash and dry fresh mint and rosemary. Rinse the lemons well with hot water, then place a pot on the stove and pour about 1 liter of water into it. Add the lemons and wait for the water to boil. Then cook the lemons for another two minutes.

Drain the lemons and immediately rinse them with cold water. Let them cool, then dry them thoroughly. Slice the lemons into rings. Place a larger pot on the stove and heat about 750 ml of water in it. Add salt, green pepper, nutmeg, juniper berries, and cinnamon, and wait for the liquid to boil.

Layer the lemon rings along with the mint and rosemary in a larger jar and pour the hot liquid over them. Make sure the liquid completely covers the lemons. Immediately seal the jar and let it rest for at least 3 weeks in a dark and cool place.

Advice
The ingredients in the recipe are enough to prepare one jar of preserved lemons. Use regular glass jars with a screw-on lid. Remember that when placing hot contents into the jars, it is sufficient to thoroughly wash them beforehand. In all other cases, the jars must be sterilized first. To do this, place the washed jars in a larger pot of boiling water. Cover the pot and let the water boil for about 5 minutes. Then remove the pot from the stove and leave the jars in the hot water until ready to use.
