Pretzels with Sesame

Ingredients

500 g Flour, Wheat, bread flour

42 g Yeast, dry

250 ml Water

1 teaspoon Salt, table

1 l Water

2 spoons Baking powder

1 handful Sesame seeds, dried

Dissolve the yeast in lukewarm water. Sift the flour onto a clean work surface, make a well in the center, and salt the flour around the well. Pour the yeast into the well and start kneading the dough. Knead the dough until it is smooth and no longer sticks to your hands or the work surface. Shape the dough into a loaf, place it in a large bowl, cover it with a clean kitchen towel, and let it rise in a warm place for half an hour.

Knead the dough well again, divide it into ten equal parts, and shape them into pretzels. Shaping the pretzels is a bit more challenging: first, roll the dough into a long and even rope, then form it into a circle. Cross the ends once at the top and then attach them to the bottom part of the dough to form a pretzel (see picture).

Preheat the oven to 200 °C. In a bowl, dissolve baking soda in hot water and be careful not to let it come into contact with your skin. Carefully dip each pretzel into the solution, then sprinkle it with sesame seeds.

Line a baking tray with parchment paper and place the pretzels on it. Put the tray in the oven and bake the pretzels for about 20 minutes on the middle rack. Once baked, serve them on a platter and offer them to your guests.
