Princesses with Mascarpone Cream and Raspberries

2 dl Water

80 g Butter, unsalted

1 spoon Sugar, white

1 pinch Salt, table

150 g Wheat flour, white, multi-purpose

4 pieces Egg, fresh

250 g Cheese, creamy

60 g Sweet cream

50 g Powdered sugar

200 g Raspberries

2 spoons Powdered sugar
Steps

Preheat the oven to 220 degrees Celsius. Line a large shallow baking tray with baking paper (or grease it well). Sift the flour into a bowl.

In a small pot, bring a mixture of water, butter, salt, and sugar to a boil. Remove the pot from the heat and add the sifted flour. Mix the ingredients well with a wooden spoon to avoid lumps. Then return the pot to the stove and cook, stirring constantly, until the dough separates from the pot and spoon. Remove the pot from the heat and let the dough cool slightly.

Gradually mix in four eggs (one at a time) into the cooled dough. It is important to mix well each time an egg is added so that it binds nicely with the dough.

Fill a piping bag with the prepared dough and pipe mounds of any size onto the baking tray (use a star-shaped nozzle). Place the tray in the preheated oven and bake the princesses for 15 minutes. Then reduce the oven temperature to 180°C and bake for another 15 to 20 minutes. Remove the baked princesses from the oven and cut off the tops with a knife. Let the pastry cool.

While the pastry is cooling, prepare the mascarpone cream. In a bowl, mix mascarpone, sweet cream, and powdered sugar with an electric mixer. Mix until a firm cream forms.

Fill the princesses with the mascarpone cream, top with fresh raspberries, and cover with the cut-off tops. Serve on a plate or platter, dust with powdered sugar, and enjoy.

Advice
