Princesses with Vanilla Ice Cream
The choux pastry for the princesses can be prepared in advance, then filled with vanilla ice cream just before serving and enjoyed for its fresh taste!

Steps

First, prepare the choux pastry. Wash the lemon, wipe it thoroughly, and grate for half a teaspoon of zest. Place a saucepan on the stove, add water, butter, salt, and lemon zest, and wait for it to boil. Sift the flour into the boiling mixture and stir vigorously with a wooden spoon until the dough separates from the spoon and the pan. Remove the saucepan from the heat and let the dough cool slightly.

Preheat the oven to 200 degrees Celsius. Beat the eggs and mix them one by one into the cooled dough. After each egg, mix the dough well until it becomes smooth again. Prepare two baking trays and line them with parchment paper. Fill a piping bag or a pastry bag with the prepared dough and pipe about 35 princesses onto the parchment paper.

Place the baking trays in the preheated oven for 10 to 15 minutes. Meanwhile, open a can of peach chunks and drain them thoroughly. When the princesses are baked, remove the trays from the oven and let the princesses cool. Take the ice cream out of the freezer and transfer it to a bowl. Let it soften slightly.

Cut the cooled princesses in half. Fill a piping bag with the ice cream and pipe dollops onto the bottom halves of the choux pastry. Decorate the ice cream dollops with one or two peach chunks. Cover the princesses with the remaining pastry halves, arrange the prepared dessert on a platter, and serve immediately to guests.

Advice
It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, soak the lemon in boiling water for a few minutes and wipe it thoroughly to remove the wax, which contains toxins. Instead of canned peaches, you can use fresh ones, but they must be thoroughly washed, pitted, and cut into chunks. The ice cream can be made at home.
