Prleška Gibanica
Prleška Gibanica is one of the best Slovenian pastries made from stretched dough, layered with seven fillings of cottage cheese and sour cream.

Sift the flour into a bowl and make a well in the center. Add salt, egg, oil, vinegar, and water into the well. Mix the ingredients with your fingers and start kneading until the dough becomes smooth in the center. Knead until the dough is soft and pliable, not sticking to your hands. Shape the well-kneaded dough into a ball, coat it with oil, cover it, and let it rest for at least 2 hours. The longer the dough rests, the easier it will stretch.

In a bowl, mash the cottage cheese with a fork and mix it with the egg and two-thirds of the sour cream. Grease the baking dish (clay, ceramic, metal, etc.) well with fat.

Roll out the dough on a lightly floured cloth, then stretch it further with your hands. Spread the dough over the prepared baking dish, ensuring about half of it hangs evenly over the edge. Thinly stretch the overhanging dough and cut it into 4 or 6 pieces.

Mix half of the remaining sour cream with the egg. Brush the first layer of dough with melted fat or oil, and the next layers with the cottage cheese filling. Repeat this process until all the materials are used (up to 6 layers). Always pour 2 to 3 tablespoons of sour cream mixed with egg and a tablespoon of fat or oil over the cottage cheese. Brush the top layer of dough with sour cream and pour 2 tablespoons of fat (oil) over it.

Bake the gibanica in a preheated oven at 200 degrees Celsius. Once baked, pour sour cream over the pastry and sweeten it if desired.

Advice
The filling should be quite salty. The stretched dough can also be prepared with the following ingredients: 0.5 kg of flour, 4 tablespoons of oil, 1 teaspoon of salt, and 3 dl of lukewarm plain or mineral water.
