Profiteroles with Almonds and Chocolate

Ingredients
Dough

0.5 teaspoons Lemon zest, fresh

2.5 dl Water

80 g Butter, unsalted

1 pinch Salt, table

200 g Wheat flour, white, multi-purpose

5 pieces Egg, fresh

75 g chocolate, dark

1 bag Powdered sugar

100 g Nuts, almonds

Steps

First, wash the lemon thoroughly and dry it, then grate half a teaspoon of zest. Prepare the choux pastry. Place a pot on the stove with water, butter, salt, and lemon zest, and wait for it to boil. Sift the flour into the boiling mixture and stir vigorously with a wooden spoon until the dough separates from the pot and spoon. Remove the pot from the heat and let the dough cool slightly.

Preheat the oven to 200 degrees Celsius. Beat the eggs and mix them one by one into the cooled dough. After each egg, mix the dough well until it becomes smooth again. Prepare two baking trays and line them with parchment paper. Fill a piping bag or syringe with the prepared dough and pipe about 35 small mounds onto the parchment paper.

Place the trays in the preheated oven for 10 to 15 minutes. Once the profiteroles are baked, let them cool. While the profiteroles are cooling, place a pot with 4 dl of water on the stove and wait for it to boil. Then place a metal bowl on top of the pot and break the dark chocolate into it, adding vanilla sugar. Stir the chocolate constantly over the water bath until it melts and the vanilla sugar dissolves. Next, place a pan on the stove and quickly toast the almond slices dry. Transfer the toasted slices to a smaller bowl.

Dip each profiterol first into the melted chocolate, then roll it in the almond slices. Wait for the chocolate to set slightly, then arrange the prepared profiteroles on a serving platter and offer them to your guests.
