Profiteroles with Pistachio Ice Cream

100 g Wheat flour, white, multi-purpose

250 ml Milk, partially skimmed

250 ml Sweet cream

100 g Sugar, white

200 g Pistachio

4 drops Vanilla, extract, natural

Steps

Shell the pistachio kernels and clean them. Place them in a blender and add eggs, milk, and sugar. Blend everything well until you get a smooth mixture. Heat a pan and pour in the pistachio mixture. Stir slowly over low heat until the mixture thickens (about 5 minutes). Be careful not to let the mixture boil, as lumps may form. Then remove the pan from the heat and let the mixture cool to room temperature.

Add vanilla and almond extract to the cooled mixture and mix well. In a bowl, whip the cream with an electric mixer until stiff, then gently and gradually fold it into the pistachio mixture using a whisk. Transfer the mixture to an ice cream maker and follow the instructions.

Prepare the profiteroles from choux pastry using the dough ingredients. Let them cool, then cut them in half. Fill the bottom half with a scoop of pistachio ice cream, cover with the top half, and serve.
