Puff Pastry
Puff pastry is made from multiple layers of fat, which are incorporated into dough made from flour and water. During baking, the butter melts and separates the individual layers of dough, while the evaporating water causes each layer to expand three to four times in thickness. Although the preparation will take quite some time, the result will be a flaky and light pastry.

250 g Butter, unsalted

250 g Flour, Wheat, bread flour

1 piece Egg, egg yolk, fresh

2 spoons Vinegar, apple

125 ml Water

Steps

Cut the butter into a bowl, knead in two tablespoons of flour, and shape it into a ball. Store it in the refrigerator.

Pour the flour onto a work surface, make a well in the center, and add the egg yolk, salt, and cold water. Knead into a pliable dough, slightly firmer than usual. Knead the dough until it becomes smooth and elastic and no longer sticks to your hands or the work surface. Shape it into a loaf, oil it, and let it rest for at least half an hour.

On a lightly floured surface, roll out the dough from the center outward in four directions to create four semicircles. Place the butter ball in the center and cover it with one semicircle. Press the top layer of dough with your fingers against the bottom layer to prevent the butter from escaping during rolling, then cover the loaf with the remaining semicircles.

Roll out the loaf to the thickness of a finger into a longer rectangle. Fold both sides toward the center, then fold it in half again. Wrap the dough tightly in plastic wrap, place it in the refrigerator, and let it rest for half an hour. Repeat the rolling and folding process four more times. After each step, let the dough rest in the refrigerator for half an hour. Always roll the dough in the opposite direction of the fold. Before using the dough, let it rest in the refrigerator.
