Puff Pastry Pizza with Mozzarella, Tomato, and Pesto

Steps

Wash the tomatoes, dry them, and slice them thinly. Arrange the slices on paper towels and lightly salt them. Let them sit for 20 minutes.

Preheat the oven to 210°C. Unroll the puff pastry and place it on a low baking tray, lining it with baking paper if necessary. Fold the edges of the pastry inward to form a decorative border about 1 cm wide. Prick the pastry in several places with a fork and brush it with beaten egg.

Spread the pesto over the pastry and sprinkle with grated Parmesan. Place the tray in the preheated oven for 10 to 12 minutes, allowing the cheese to melt and the pastry to turn golden brown.

Dry the salted tomato slices well with paper towels. Remove the tray with the pastry from the oven and first arrange the mozzarella over the pastry, followed by the tomato slices. Drizzle the pizza with olive oil and bake in the preheated oven for another 8 to 10 minutes, until the mozzarella melts and turns golden. Garnish the finished pizza with basil leaves. Serve warm or cooled to room temperature.

Advice
Instead of fresh puff pastry, you can also use frozen puff pastry, but it must be thawed before use. The easiest way to thaw it is to leave it packaged in the refrigerator overnight. If thats not possible, place the puff pastry sheets on a plate side by side and let them thaw at room temperature for 30–60 minutes.
