Puff Pastry Roll with Leek and Sausage

500 g Dough, puff

2 spoons Oil, vegetable oil, canola

2 piece Carniolan sausage

Cut off the dark part of the leek, then wash it thoroughly under running water, cut it lengthwise in half, and slice it into approximately 0.5 cm wide pieces. Cut the sausage into chunks.

Heat oil in a pan and quickly fry the sausage chunks. Add the sliced leek and slowly sauté it over medium heat until soft. Remove the pan from the heat and let the mixture cool to lukewarm.

Preheat the oven to 210 degrees Celsius. Mix the cooled leek and sausage mixture with eggs, salt, and ground pepper. Roll out the puff pastry on a lightly floured surface into a rectangle.

Sprinkle breadcrumbs over the rolled-out pastry. Place the prepared filling on the lower half of the pastry and sprinkle grated cheese over it. Cover the filling with the upper half of the pastry to form an elongated roll. Brush the top and edges, which you press together, with beaten egg, and optionally sprinkle with cumin. Poke several holes in the top pastry with a knife or fork to allow steam to escape during baking.

Transfer the roll to a baking tray lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until it turns a nice golden brown color.
