Pumpkin Bread
When pumpkin season is at its peak and you simply dont know which dish to incorporate them into, pumpkin bread is definitely a recipe you must try. The homemade bread will fill your kitchen with an irresistible aroma, and it will be hard to resist the urge to eat it before it has even cooled down.

350 g Small pumpkins

3 spoons Oil, olive

1 piece Onion, raw

2 pod Garlic, fresh

350 g Wheat flour, white, multi-purpose

7 g Yeast, dry

125 ml Water

Steps

Wash the pumpkins, dry them, and grate them. Place them in a bowl or colander, mix with a teaspoon of salt, and let them sit for 20 minutes to release excess liquid. Then, squeeze the pumpkins well with your hands.

Peel the garlic and onion, and finely chop them separately. Heat a pan and grease it with a tablespoon of oil. Add the onion and sauté until translucent. Mix in the squeezed pumpkins and garlic, and sauté everything together while stirring. Remove from heat and let it cool.

Sift 2/3 of the flour into a bowl. Mix it with yeast, a teaspoon of salt, and the cooled sautéed pumpkins. Make a well in the center and pour in the water and two tablespoons of oil. Mix the ingredients until they come together into a rough and sticky dough. Transfer it to a floured work surface and knead with your hands until it becomes soft and elastic, and no longer sticks to your hands or the surface. Add the remaining flour gradually as needed.

Shape the kneaded dough into a loaf and place it on a baking tray that has been lightly oiled or lined with baking paper. Loosely cover it with a clean cloth and let it rise in a warm place for 30 minutes.

Before baking, brush the risen loaf with water and sprinkle with coarse salt. Bake in a preheated oven at 220°C (428°F) for 10 minutes, then reduce the temperature to 170°C (338°F) and bake for another 30 minutes. Let the bread cool completely before serving.
