Pumpkin Buns with Jam

Ingredients

1 piece Pumpkins

2 dl Milk, whole milk

750 g Flour, Wheat, bread flour

1 piece Yeast, dry

3 spoons Sugar, white

4 pieces Egg, fresh

2 bags Sugar, white

50 g Butter, unsalted

50 ml Oil, plant, sunflower

1 teaspoon Salt, table

Steps

Wash the pumpkin, peel it, cut it in half, and remove the seeds with a spoon. Cut it into pieces, place them in a pot, pour milk over them, and cook until soft. Blend the cooked pumpkin into a smooth puree using a hand blender.

Let the pumpkin puree cool to lukewarm, then add crumbled yeast, sugar, vanilla sugar, melted butter, 3 egg yolks and 4 egg whites (reserve one yolk for the glaze), oil, and finally salt. Mix well.

Gradually add flour to the pumpkin mixture until you get a soft and pliable dough that is not sticky. The amount of flour depends on how watery the pumpkin is, so add it as needed. Knead the dough into a ball, grease it, cover it with a clean cloth, and let it rise in a warm place for 30-40 minutes.

Place the risen dough on a floured surface and cut it into pieces weighing about 50 grams each (use a scale for accuracy). Shape them into balls with your hands.

Cut kitchen twine into pieces about 20 centimeters long. Place three pieces crosswise on the surface. Slightly flatten each dough ball with your hand, fill it with your desired filling, and shape it back into a ball. Place it where the strings meet. Tie two opposite ends of the string together to form a pumpkin shape.

Place the filled pumpkins on a baking tray and let them rest for 10 minutes. Brush them with beaten egg yolk and bake for about 30 minutes in an oven preheated to 170 degrees Celsius.

Once the pumpkin buns have cooled, remove the strings and serve them with a cup of warm drink and, if desired, an additional spread.
