Pumpkin Cake
Although this cake contains grated pumpkin, it doesnt mean that the cake is light and healthy. Dont forget the eggs, bacon, and various cheeses that make the cake very rich and luxurious.

450 g Small pumpkins

200 g Cheese, feta

Clean the pumpkins, wash them, and grate them finely. Place the grated pumpkin in a colander, lightly salt, and mix. Place the colander over a sink or a larger bowl and let it sit for 20 minutes to allow excess water to drain from the pumpkin.

Preheat the oven to 180 degrees Celsius. Peel and finely chop the onion and garlic. Cut the bacon into small pieces. Heat oil in a pan and sauté the onion, garlic, and bacon for about 5 minutes. Stir the ingredients in the pan several times during cooking.

Transfer the sautéed ingredients to a bowl and mix them with the drained grated pumpkin, parmesan, crumbled feta cheese, pepper, salt, and ricotta. In another bowl, whisk together the flour, baking powder, and eggs with a hand whisk. Mix until you get a smooth batter without lumps. Pour the mixture into the bowl with the pumpkin and mix everything well.

Grease a round cake or pie pan well (you can also line it with baking paper) and pour the prepared mixture into it. Bake in the preheated oven for 40 to 45 minutes. The cake is done when the top turns golden brown and the center is no longer runny.

Remove the baked cake from the oven, cut it into slices of any size, and serve with a large bowl of salad.

Advice
The cake can also be baked in a deep rectangular baking dish measuring 20 x 30 cm. When buying pumpkins, choose shiny and undamaged fruits whose weight should be proportional to their size. The skin should not be too hard, as this is a sign of an overripe fruit with fibrous flesh. Ricotta is a popular soft Italian cheese made from (partially skimmed) cows milk. It is similar to our cottage cheese, but it has a more pronounced flavor. Ricotta can be replaced with sweet milk cottage cheese, also known as albumin or sweet cottage cheese.
