Ingredients
Almond crumbs

180 g Nuts, almonds

1 teaspoon Spices, cinnamon, ground

0.25 teaspoons Salt, table

80 g Butter, unsalted

2 spoons Syrup, maple

1 kg Pumpkin, raw

2 dl Coconut milk

1.5 teaspoons Spices, cinnamon, ground

130 ml Syrup, maple
Steps

First, prepare the pumpkin puree. Preheat the oven to 170°C. Line a baking tray with parchment paper. Thoroughly wash the pumpkin and cut it in half. Remove the seeds with a spoon. Place both halves on the baking tray (cut side up) and cover each with a piece of foil. Bake in the preheated oven for about 60 minutes, until the pumpkin flesh softens.

While the pumpkin is baking, prepare the almond crumble for the topping. In a bowl, mix ground almonds, cinnamon, and salt. Add butter pieces and maple syrup. Use your fingertips to mix until a crumbly mixture forms. Store the almond crumble in the refrigerator until ready to use.

Once the pumpkin is soft, remove it from the oven and lower the oven temperature to 160°C. Scoop out the pumpkin flesh (discard the skin) and blend it smoothly with an immersion blender. Transfer the pumpkin puree to a larger bowl and add coconut milk, all the spices, eggs, and maple syrup. Mix all the ingredients with an electric mixer for about 2 minutes until smooth. Grease a deep ovenproof dish with butter. Pour the pumpkin mixture into the dish and spread it evenly. Sprinkle the almond crumble on top and bake in the preheated oven for about 30 minutes.

When the dessert turns golden brown on top, remove it from the oven. Serve warm or cold with whipped cream or vanilla ice cream.
