Steps

Preheat the oven to 180 degrees Celsius. Place paper liners in the muffin tin.

In a bowl, quickly mix the ingredients for the cupcakes. Fill the paper liners 3/4 full with the prepared batter. Bake the cupcakes in the preheated oven for about 13 minutes. Once baked, let them cool.

Using an electric mixer, whip the mascarpone, cream, and sugar for 3 minutes until you get a thick cream.

Peel the apple and remove the core. Cut it into pieces and place them in a saucepan. Add orange juice, sugar, and cinnamon, and cook over moderate heat, stirring occasionally, until the apples caramelize.

Decorate the cooled cupcakes with caramelized apples and mascarpone cream. Arrange them on a large plate or platter and serve.
