Pumpkin Fritters with Herbs

300 g Pumpkin, raw

60 g Wheat flour, white, multi-purpose

60 g Cheese, Parmesan, grated

Wash the pumpkin, peel it, cut it into pieces, and remove the seeds. Grate the pumpkin flesh coarsely. Rinse the parsley, thyme, and mint under running water and shake them dry. Remove the mint leaves from the stems and chop them coarsely along with the thyme and parsley. Clean the spring onion, wash it, and chop it finely, including the green part.

In a bowl, whisk the eggs well with a hand whisk. Add the flour and mix everything into a smooth batter without lumps. Then mix in the grated Parmesan, grated pumpkin, chopped herbs, and spring onion. Season with salt to taste.

Heat the oil well in a pot. Scoop the batter with a greased spoon and carefully place it into the hot oil. When the batter turns golden brown, remove the fritters with a slotted spoon and place them on a plate lined with paper towels. Repeat the process until all the batter is used.

Once all the excess fat has drained, serve the fritters in a bowl, sprinkle with paprika, and offer as an appetizer or snack.

Advice
