Pumpkin Hummus
Hummus is definitely not a modern invention. It is a delicious spread made from chickpeas, particularly popular in the Middle East, where it is considered one of the oldest and most important dishes. Traditionally, hummus is prepared from cooked chickpeas, tahini (sesame paste), garlic, olive oil, lemon juice, and parsley, but it is also tasty with many other additions. In the autumn season, we can spice it up with a delicious pumpkin puree.

165 g Chickpea, cooked

3 spoons Sesame butter, tahini

To prepare the hummus, we need 115 g of pumpkin puree, which we make from roasted pumpkin. Clean, wash, and chop half of a small pumpkin and bake it for about 20 minutes at 200 degrees Celsius (bake the pumpkin until it softens).

Scrape the roasted pumpkin flesh from the skin with a spoon and place it in a food processor. Add chickpeas, tahini, lemon juice, cumin, garlic, olive oil, salt, and pepper. Blend all the ingredients into a smooth puree. Taste the hummus and add more salt if desired.

Serve the prepared hummus in small bowls and accompany it with sliced vegetables.
