Pumpkin Muffins for Halloween

200 g Pumpkin, raw

100 g Nuts, pecan

0.5 kg Spices, ginger, ground

1 piece Egg, fresh

5 spoon Oil, plant, sunflower

300 g Whey, sour, liquid
for decoration

200 g chocolate, dark

1 handful Nuts, almonds

Steps

Cut the flesh of the pumpkin into cubes and place them in a pot. Add enough water to cover the cubes. Place the pot on the stove and cook the cubes over moderate heat for 15 minutes. Drain the cooked pumpkin, transfer it to a larger bowl, and mash it well.

Place paper liners in the muffin molds. If you don't have liners, grease the molds with some butter and dust them with flour. In a pan, toast the pecans quickly without oil, then let them cool and chop them finely (you can also use a food processor).

In a clean bowl, combine the flour, sugar, spices, nuts, baking powder, baking soda, and salt. Mix well, then add the dry mixture to the bowl with the pumpkin puree. Mix thoroughly. In a separate bowl, whisk together the egg, oil, and buttermilk. Pour the egg mixture into the bowl with the pumpkin mixture and mix well.

Preheat the oven to 180°C. Fill the muffin molds 3/4 full with the batter and bake in the preheated oven for 25 minutes. Remove the baked muffins from the oven and let them cool for 5 to 10 minutes before removing them from the molds.

Melt the chocolate in a pot and lightly spread it over the tops of the muffins. Sprinkle with chocolate sprinkles. Cut black licorice into 10 cm pieces and insert 8 pieces into each muffin to create spider legs. On one side, insert 2 almond slices for the eyes and use a bit of dark chocolate to draw the pupils.
