Wash the pumpkin and dry it thoroughly with paper towels. Preheat the oven to 175 degrees Celsius.

Cut the pumpkin in half with a large knife and scoop out the seeds with a large spoon, removing all the seeds. Cut the cleaned halves into larger pieces and arrange them on a low baking tray lined with baking paper. Place the tray in the preheated oven for about 45 minutes to soften the pumpkin flesh.

Once the pumpkin can be easily pierced with a fork, remove the tray from the oven. Wait a few minutes for the pieces to cool slightly, then scoop the roasted flesh out of the skin with a spoon. Puree the flesh with a hand mixer or blender until smooth. The puree can be used immediately or stored in bags and frozen.

Advice
You can mix any desired spices into the puree, such as cinnamon, allspice, nutmeg, salt, pepper, etc. If desired, it can also be sweetened with sugar or a natural sweetener.
