1 dl Soy sauce, tamari

1 spoon Sugar, brown

Carefully place the quail eggs in a pot and cover with water, lightly salted. Place the pot on the stove and cook the eggs over medium heat, gently stirring, until they come to a boil. Then cook for another 5 minutes. Remove the cooked eggs from the pot and place them in a bowl of cold water. Once cooled, carefully peel the eggs.

Pour soy sauce into the pot, add sugar and water, and bring to a boil. Reduce the heat and add the peeled quail eggs to the sauce. After five minutes, remove the pot from the heat and let the eggs marinate for another 15 minutes, then transfer them to a plate and serve.

Advice
In marinated eggs, the color will reach all the way to the yolk. The brown soy color on the egg will be less intense after marination than in the picture. If you gently stir the eggs at the beginning of cooking, the yolk will "settle" in the center of the egg.
