Quail in Mushroom Sauce

Ingredients

4 pieces Game meat, quail

2.25 teaspoons Salt, table

0.5 teaspoons Spices, pepper, black

4 spoon Juice, lemon

1 dl Oil, olive

1 piece Onion, raw

200 g Mushrooms, mushrooms, fresh

0.5 teaspoons Spices, thyme, dried

2 dl Water

1 spoon Tomato, concentrate

1 spoon Sour cream

5 twig Parsley, fresh
Steps

Rinse the quails under running water and dry them well with a paper towel or a clean kitchen cloth. Then season them with two teaspoons of salt, pepper, and drizzle with lemon juice inside and out. Preheat the oven to 220 degrees Celsius. Pour 0.75 dl of oil into a baking dish and place the meat in it. Bake the meat for 30 minutes. During baking, baste the quails several times with the juice from the baking dish.

Peel the onion, rinse it, and chop it finely. Rinse the mushrooms under running water, wipe them, and then slice them thinly. Pour the remaining oil into a pan, heat it, and add the onion. Sauté until the onion becomes translucent, then add the mushrooms and cook until the water from the mushrooms evaporates. Pour water over the mixture. Stir well and season with a quarter teaspoon of salt, add a little thyme, and stir again. Add a tablespoon of tomato paste, a heaping tablespoon of sour cream, and mix. Cook the sauce for another 5 minutes, then remove the mushrooms from the heat.

Arrange the sauce on plates and place the roasted quails on top of the sauce. Rinse the parsley, shake it off, and chop it finely. Sprinkle it over the roasted quails, and you can serve a bowl of homemade salad alongside the dish.
