Quesadilla (Folded Tortilla) with Vegetables and Cheese
A folded tortilla with zucchini, corn, broccoli, and cheese is an excellent choice for a quick lunch or dinner. You can also add canned tuna or diced cooked and fried chicken to the filling if desired.

Ingredients

4 pieces Tortilla, wheat

1 cup Broccoli, fresh

2 spoons Oil, olive

1 piece Small pumpkins

1 pod Garlic, fresh

200 g Corn, yellow, in brine

200 g Cheese, Cheddar

Cook the broccoli florets in salted boiling water for about 2 minutes until they soften but remain firm. Optionally, cool the blanched florets in an ice bath to stop the cooking process, then drain and roughly chop them. If you prefer not to use an ice bath, simply drain them well, cool them, and chop them.

Wash the zucchini and cut it into approximately half-centimeter thick slices, then cut them into halves or quarters. Peel and finely chop the garlic. Heat oil in a pan and first sauté the sliced zucchini. Once it softens and turns slightly brown, add the garlic and continue cooking until the garlic becomes fragrant. Remove from heat and let it cool.

In a large bowl, mix the chopped broccoli, drained corn, sautéed zucchini, and grated cheese. Season with salt and ground pepper to taste, and optionally add a bit of ground chili and other fresh or dried herbs (basil, oregano, cilantro, parsley, etc.). Mix the ingredients well.

Place a larger pan on the stove and heat it up, then place a tortilla in it. After 20 seconds, flip it. Add 1/4 of the filling to one half. Fold the tortilla over the filling, then cook it on both sides until the cheese melts nicely. Repeat the process until you run out of ingredients.

Cut the quesadillas into pieces and serve them on plates. Serve the prepared dish while it's still warm, and optionally offer a refreshing sauce on the side.
