Quick and Juicy Apple Pastry
A quickly prepared dessert that is gluten-free. Instead of wheat flour, we used rice flour. You can easily make it yourself by simply grinding rice in a coffee grinder.

150 ml Milk, whole milk

50 g Sugar, white

180 g Sour cream

50 g Flour, rice

1 pinch Salt, table

3 pieces Apple, fresh

30 g Butter, unsalted

2 spoons Sugar, brown

Steps

Preheat the oven to 190 degrees Celsius. Grease a deep rectangular baking dish (30 x 20 cm) with butter and sprinkle with brown sugar.

Crack the eggs into a bowl and mix them with an electric mixer for 2 minutes. Gradually pour in the milk while mixing.

Add sugar, lemon zest, vanilla extract, sour cream, rice flour, and salt, and quickly mix everything together.

Peel the apples, remove the cores, and slice them into 0.5 cm thick rings. Heat butter in a large pan, add the apple rings and two tablespoons of brown sugar, and cook for 5 minutes.

Arrange the sautéed apples on the bottom of the baking dish, saving a few nice, whole rings. Pour the egg mixture over the apples, place the reserved rings on top, and bake in the oven for 30 minutes.

Let the pastry cool before serving and, if desired, dust with powdered sugar.
