Quick Apple and Raisin Fritters
Although fritters are considered a typical carnival treat, we also enjoy them on other occasions. Especially on a cold winter day when we return from a walk feeling chilly. They pair well with mulled wine and are also excellent with compote or whipped cream. The best part is that they are ready in just half an hour.

80 g Raisins

1 piece Apple, fresh

0.5 teaspoons Spices, cinnamon, ground

4 spoon Sugar, white

3 pieces Egg, fresh

3 spoons Milk, whole milk

3 spoons Oil, vegetable oil, canola

300 g Flour, Wheat, bread flour

0.5 bags Baking powder

Steps

Sort and rinse the raisins. Place them in a small bowl and soak them with rum, water, or orange juice. Let them soak while you prepare the other ingredients.

Wash and peel the apple. Cut it into quarters, remove the core, and then dice the quarters into small pieces. Place the apple pieces in a small bowl, drizzle with lemon juice, and sprinkle with a spoonful of sugar and cinnamon. Mix and set aside.

In a larger bowl, beat the eggs and add the remaining sugar, milk, oil, and grated lemon zest. Mix well with a hand whisk or spoon.

Mix the flour with baking powder and gradually incorporate it into the egg mixture. You should get a smooth batter without lumps. First, mix in the seasoned apple pieces, then add the soaked raisins, making sure to drain them well. If the batter is too thick, add a little more milk.

Heat oil in a large pot to 170 ºC (if you don’t have a thermometer, you can test the oil by dipping the handle of a wooden spoon into it. The oil is hot enough when small bubbles form around the handle).

Dip a spoon into the hot oil for a few seconds. Use the spoon to scoop the batter and carefully drop it into the oil (you can use another spoon to help). Do not overcrowd the pot with too many fritters at once. Fry them over medium heat, and when they turn golden brown on one side, flip them to fry the other side.

Remove the fried fritters with a slotted spoon and place them on a plate lined with paper towels. Let the excess oil drain.

Serve the warm fritters on a plate or platter and dust them with powdered sugar. Serve the prepared dessert immediately.
